From Honey Shop to Nougat Maker
Luca Nougat grew out of our family’s long connection with Tasmanian honey.
Years ago, my family ran a honey shop in northern Tasmania — the kind of place people stopped for leatherwood honey and stayed for the ice cream. We made the ice cream the old-fashioned way using cream, egg yolks and honey, which meant there were always leftover egg whites at the end of the day.
For a long time, they simply went to waste.
Then, while travelling through France as a family, we made an unexpected stop in Montélimar — a town famous for traditional nougat. Seeing shop windows filled with slabs of honey nougat sparked an idea for Dad. Our egg whites suddenly felt less like leftovers and more like the beginning of something.
Back home in Tasmania, he began experimenting in the kitchen, teaching himself traditional nougat-making methods batch by batch until eventually he developed the recipe that became Luca Nougat.
Today, I continue making our nougat the same way it began years ago: by hand, in small batches, with patience and carefully chosen ingredients. Every batch still starts in the cooker beside me before being moulded, cut, wrapped, and packed right here in Tasmania.

All of our nougat is handcrafted using real Tasmanian honey, chosen for its balance, clarity and gentle floral notes. But leatherwood honey is something else entirely.
Found only in the remote rainforests of Tasmania’s west coast, leatherwood blooms for just a short window each year, producing a honey unlike any other in the world — deeply aromatic, floral and unmistakably Tasmanian.
Harvesting it is no simple task. Beekeepers travel deep into rugged country, where hives are hauled by train along steep river gorges and forest tracks first carved through the wilderness generations ago.
