Apricot Nougat

Some flavours have a way of bringing back memories.

Sweet dried apricots have long been a favourite companion to traditional nougat. Their gentle tang and natural sweetness create a flavour that feels familiar, comforting and wonderfully nostalgic.

We combine generous pieces of apricot with roasted almonds, pistachios and Tasmanian honey, folding everything through soft handmade nougat. The fruit brings brightness, while the nuts provide richness and texture.

The result is a beautifully balanced bar that feels both classic and contemporary — a reminder that some combinations never lose their appeal.
