This is where our story begins.

At the heart of every piece is Tasmanian Leatherwood honey — one of the world’s most distinctive honeys, gathered from the remote rainforests of Tasmania’s west. Floral, aromatic and unmistakably Tasmanian, it gives this nougat its character.

We combine it with roasted almonds and slowly fold it through soft traditional nougat, handcrafted in small batches using time-honoured methods. The result is a delicate, chewy nougat where the honey remains the hero.
